So today we made some "baby monster" cookies. Monster cookies are big ol' cookies usually made without flour and I wanted to make Mr. O a healthier cookie that is more like a snack bar. So I loosely followed a monster cookie recipe, modifying it to make 'em less sugary and came up with a pretty tasty snacky cookie for my little monster. Oh, and I made them little, hence the "baby monster."
Oliver helped measure the oats and turn on the mixer. He loooooved to watch that mixer go! He just kept saying "funny, funny" every time we would add an ingredient. He also dipped his finger in the batter and said "taste" without my doing so. He's a natural ;)
And the best part is my, er, discerning child ate them! No sugar and all. Yay.
Here is the recipe:
Baby Monster Cookies
1/3 c butter
1/2 c maple syrup
1 tablespoon molasses
1 c almond butter or peanut butter
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
3 c rolled oats
3/4 c raisins (or choc chips, m&m's)
1. Preheat oven to 350 degrees F
2. In a large bowl, cream together the butter, maple syrup, molasses and peanut butter until smooth. Beat in the eggs, then stir in the vanilla. Mix in baking soda and oats until well blended. Stir in the raisins and chocolate chips. Roll dough into 1 inch balls, and place 3 inches apart on an ungreased cookie sheet. Flatten slightly with a fork.
3. Bake for 7 to 8 minutes in the preheated oven. Cool on cookie sheets for a few minutes, before transferring to wire racks to cool completely.
